Selection And Storage
When buying unshelled pistachios make sure the shells are partially open-not only because it's a great help in getting the nutmeat out, but because closed shells mean the nutmeat is immature.
Whole nuts should feature healthy looking, off white color shell, have compact and uniform in size, and feel heavy in hand. They should be free from cracks other than the natural split, mold, spots, and of rancid smell.
Raw, unshelled pistachios should be placed in a cool, dry and dark place. They’ll keep for couple of months. However, shelled kernels should be placed inside an airtight container and kept inside the refrigerator in order to prevent them turn rancid.

Pistachio History
Native to the Western Asia, humans have eaten pistachio nuts for at least 9,000 years. The pistachio's high nutritional value and long storage life also made it an indispensable travel item among early explorers and traders.
For Iranians no festivity can be held without pistachio nuts as well as other nuts like walnuts, almond and hazelnuts. Crushed or sliced, pistachios are often sprinkled over Persian dishes, salads, desserts and also used in confections. |
Iran and United States are the major producers of pistachios. Presently Iran accounts for more than 50 percent of global pistachio production. The most popular variety grown for the commercial purpose is the “Kerman”.
In California, almost all female pistachio trees are the cultivar "Kerman", selected, in 1929, from seed imported from Rafsanjan city (Kerman province-Iran).
