Khoraak-e Loobiaa "Red Kidney Beans Stew"

- Cooking Time: 75 minutes
- Soak the red kidney beans in water overnight
- Slice the mushrooms
- Dice the onion
- Mince the garlic
- 3 cups of boiling water
- Pour oil into the cooking pot and fry the onion until slightly golden. Add salt, black pepper, garlic and mix thoroughly.
- Drain the beans into a colander, add it to the pot, add 3 cups of boiling water, cover with the lid (leave a crack open for the steam to escape), and cook over medium low heat for 1 hour.
- Add the mushrooms, lemon juice, adjust the seasoning, put the lid back on and simmer for another 15 minutes.
Khoraak Loobiaa can be served warm or cold with Bread or Chelow "White Rice".
