マーガリンは1870年にプロバンス生まれのヒポリット メジェ モーリスというフランス人によって発明されました。
ルイ ナポレオン三世の命により、物資供給不足とバターに代わる安い代用品として、軍隊や下層階級の人々のために開発されました。

マーガリン、ショートニング、ファットスプレッドを避けなくてはならない理由?
マーガリンと他のバターの偽物には以下を含む、無数の不健康な成分が入っています。
トランス脂肪酸:これらのマーガリンやショートニング、ファットスプレッドに含まれる合成脂肪は油に水素を添加し、植物油を固形脂肪にする過程により作られます。トランス脂肪酸は心臓病、がん、骨異常、ホルモン異常、ぜんそくや皮膚疾患などに関連があるといわれ、また不妊症や乳分泌異常、早産や成長異常、幼児の行動異常障害や発達障害にも関係があるといわれています。
マーガリンはコレステロール値をあげるだけではなく、LDL(悪玉コレステロール)を増加し、HDL(善玉コレステロール)値を下げます。マーガリンは免疫反応を減少させる。トランス脂肪酸は血液中のインシュリンレベルを上げ、糖尿病のリスクを高める。また、トランス脂肪酸を食べた母親の母乳中に含まれるトランス脂肪酸のレベルにも影響を与える。
合成ビタミン:合成ビタミンAや他の合成ビタミンがマーガリンやファットスプレッドには添加されています。これらはしばしば逆効果をもたらし有害でもあります。
乳化剤、保存料:植物性ショートニングのほとんどはBHTなどの保存料によって安定した状態を保ちます。(ブチル水添化合物は研究所で科学的につくられ、食材の保存料として使用されます、がん、ぜんそく、幼児の行動異常障害などとの関連が疑われています。BHTは薬としてはヘルペス一般やエイズの治療薬としてつかわれています。)
漂白剤:部分的に水素化合された植物油の自然な色は灰色です。それでは食欲がわかないので、工場はそれらを漂白して白くすることが許されています。そして、黄色の着色料をバターのような色に見えるように添加します。合成色素は敏感な人たちに感覚過敏を引き起こしADHD(注意欠陥障害)のような状況を引き起こす要因になるといわれています。
合成香料:これらは水素添加油のひどい味や香りを隠し、偽のバター風味をつけるために使われます。
大豆たんぱく質分離物:これは甲状腺機能異常、消化不良やその他の多くの健康障害の原因と言われています。
ステロール:これらのエストロゲン含有物は内分泌物異常を引き起こしますこれらのステロールは動物の性別異常を引き起こします。

バターの買い方
一番良いバターはオーガニックの牧草を食べて育った牛からとれた生のバターです。次は牧草を食べて育った牛のパスチャライズ(低温加熱殺菌をした)バター、次に

健康にとっては脂肪の量よりもどんなタイプの脂肪を食べるかがより重要です。
不飽和脂肪酸 – 良い
何か:植物や魚に含まれる油。
