Eggplant becomes tender when cooked and develops a rich, complex flavor. It is capable of absorbing large amounts of cooking fats during the process of cooking. Sprinkling a pinch of cooking salt or soaking pieces in salt water reduces the amount of oil absorbed. This also removes the bitterness of the eggplant if it is the type that has a bitter taste in it.

Selection And Storage:
Buy healthy looking, firm, shiny, bright-colored eggplant that feels heavy and solid. The green-purple cap at the top is a good indicator of freshness. If it is firm and the cut is green the eggplant is fresh.
At home, they can be kept in a cool place for use in a day or two but ideally should be stored in the refrigerator at high relative humidity, where they keep fresh for few days.
